As usual, I'm a little late, but these are the cookies I did for Easter this year. Simple chick and bunny Peeps. So easy and so cute! In the spirit of impending Spring, I also did some in green and blue, but I didn't take pictures of that batch. Oops. I seriously love these cookies. They're so easy and so cute. Did I say that already? Because it's true. I don't even keep the Peeps cutters with the rest of the cookie cutters. The Peeps live in a kitchen drawer, where they'll be safe. When I saw the Peeps cookie cutters at Michael's, I had to get them. I didn't even try to rationalize it.  They're Peeps cookie cutters for crying out loud. Who needs a reason? The boy, being a purist at heart just like his mother, refuses to eat the bunny Peeps.  He calls them impostors.  Somehow he learned that Peeps were originally chicks. He's my boy and I love him, but he's a little odd sometimes... I thought the pink bunny Peeps were cute. They're iced yellow or pink, and covered with regular granulated sugar.  Easiest. Cookies. Happy Easter!  Just a day late! I'm usually just a little behind the 8-ball.  Today is no exception. Saturday we made hot cross buns for Easter. It was fun!I think this is the third year we've made them.  They were never a tradition in our house when I was growing up, but now that I've discovered them, we'll be making them every year, time permitting. I use the Pioneer Woman's recipe , just slightly tweaked.  First, I use the whole cinnamon roll dough recipe, instead of half.  Because, really, the half recipe only makes two dozen or so buns, and for all that work, it's not enough.  Just being honest. Second, I use currants instead of raisins.  The first year I used raisins because I could not find currants anywhere.  It was bizarre. But the past two years our grocery store has carried SunMaid Zante currants, which are lovely. Third, I use the cinnamon called for in the recipe, plus one teaspoon (heaping) cardamom and a heavy pinch of ...

And I mean simple!  But I remembered to take a picture this time.  Another parent from the boy's second grade class texted me this weekend and asked if I could bring cross cookies to school on Thursday for their Easter party.  So, being the pushover I am, I said sure.  Then she said nothing fancy.  So I went with it! (Hey, I didn't say it was a good picture.) Seriously, it took longer to mix the colors than it did to ice 24 cookies.  But it's been a busy week, and it is only going to get busier, so simple is good.  So that's it for today.  More Easter treats coming up soon!
